After last months snafu I decided to use a sure winner this month - ok at least one that looked easier. I ran across this http://www.thecookierookie.com/gluten-free-lemon-bars-best-ever/ on Facebook and thought - sure. I mean after all, an article where the headline is "best ever" means I need to verify its authenticity.

Grating the lemons was time consuming and juicing my own (without a proper juicer) was also time consuming but not too difficult. I used four lemons in all.

The recipe is clear and easy to follow. I used Bob's Red Mill Gluten free flour, not the 1 for 1 flour so I needed to add a sixteenth of a teaspoon of xanthan gum.

I baked them in an 8x8 ceramic dish. After they were baked I let them cool completely and set them in the refrigerator. They were yummy! My husband, who does not like lemon, said they were good and my son, who thinks all gluten free is gross, ate a quarter of the pan (they were cut in to 16 peices).

They are very sweet! I think next time I will see if they set as well with slightly less sugar.

They also are very sticky when warm. I took a few to the park to give to the children of a friend I was meeting. They were no less yummy and I can see how they would be good warm with vanilla ice cream.
