Amara’s Quick and Dirty Hunan HuaCai

Amara Danicek

This dish is only for people who really like spicy food! There aren’t any magic measurements I can give because I’ve learned by watching the old ladies here and you can be sure they have never used a measuring cup before in their life.

Ingredients: Cauliflower, fresh hot red chili peppers (if you have an Asian market near you get the Hunan ones), dark soy sauce, oil, garlic, white rice vinegar, salt, dried pepper flakes, garlic sprouts

In a wok add finally chopped garlic, dark soy sauce, oil, vinegar, salt, and a pinch of dried pepper flakes. Play around with the amount until you find something you like. I tend to only ad a drop of oil and go heavy on the other stuff. Throw in your cauliflower chopped into about 1 inch pieces and then the chopped fresh peppers and garlic sprouts. Stir Fry them, adding water as needed until done.
