Borderland Watch Stew

Used by the Borderlander's at their outposts, while guarding against invasions from the Blight.

  • 1 broiler-fryer chicken* (about 3 1/2 lbs,), cut up
  • 4 cups chicken broth
  • 2 stalks celery, sliced
  • 1 teaspoon leaf thyme, crumbled
  • 3/4 teaspoon leaf marjoram, crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb (2 large) all-purpose potatoes, pared and cut into 1/2 inch cubes
  • 2 medium-size onions, coarsely chopped
  • 1 can (16 ounces) crushed tomatoes
  • 4 medium-size carrots, pared and cut into 3/4 inch cubes

Combine chicken, chicken broth, celery, thyme, marjoram, salt and pepper in large saucepan. Bring to a boil. Lower heat; cover and simmer for about 30 minutes or until chicken is tender and no longer pink near bone. Remove chicken from broth. Skim fat from broth. When chicken is cool enough to handle, remove meat from bones and remove skin. Cut meat into bite-size pieces. Reserve.

Add potato, onion, tomato and carrot to saucepan. Cover and return to boiling over medium heat; lower heat and simmer 20 minutes. Stir in reserved chicken. Gently heat through.

(*)Note: This recipe was originally made with rabbit or similar small animals. Chicken was put in its place due to the availability in this Age.
