Mandarin Curry Couscous

Ingredients: whole wheat couscous, bell peppers, onions, garlic, olive oil, salt, pepper, curry powder, feta cheese, flavored tofu (preferably smoked but anything that sounds good will work.

In a saucepan sauté chopped bell peppers, onions, and garlic with olive oil until onions start to brown. In accordance with the directions on the box of couscous dump in the required amount of water for the amount of couscous you will be using. Then had the curry according to your taste followed by the couscous. When the couscous starts soaking up the water add the oranges and tofu. When the couscous is done add salt and pepper to taste and then sprinkle with feta cheese. This is one of these dishes that taste even better the next day.
