Steamed Dumplings

Some of the volunteers here came up with this during Christmas as a pork alternative to traditional dumplings.

Ingredients: dumpling wrappers (from an Asian market), garlic, egg plant, carrots, garlic sprouts or chives, ginger, oil, two eggs, soy sauce and white rice vinegar (for a dipping sauce), rice cooker or other steamer

First chop up all the vegetables into very fine pieces. Then in a large bowl mix them together with the garlic and ginger. Add a splash of oils and the two eggs so the mixture sticks a little bit. Take a pinch of the mixture and fold it into dumplings with the wrappers. It helps to wet the edges so the wrappers stick to themselves but otherwise you can shape them as you want. Next plop them into your steamer for a bit until they are done! This is great for a large group to do together.
